Fast and Easy Food - Thatsa What I Like!

This is the place to post your quickest and easiest recipes. Now when I say quick and easy, I mean quick and easy. If you have a recipe which calls for me to julienne anything, kindly keep it to yourself. If I have to assemble my food processor, I don't want to hear it. I literally want to hear about the time that you dumped a can of corn on a plate and called it dinner. These are the only types of recipes I have any patience for. Remember this site is written by you! If you would like to submit your culinary creations for all to see click here. I will choose approximately 10-20 per week to post.

Chief MommyOwl's Lemon Pepper Salmon
As you all know, Mrs. Dash is one of my favorite ingredients. For this easy recipe. Take as many salmon fillets as you have people to feed and place them in a disposable pan sprayed with nonstick spray. Put a pat of margarine on top of each piece. Shake on a generous layer of Mrs. Dash Lemon Pepper. Place in a 350 oven and bake until fish flakes with a fork. While fish is baking, make white rice in the microwave. Serve fish on white rice. I serve this sometimes when company comes and I always get compliments.

Quick Chili - Fran R., Texas
Brown one pound of ground beef at the bottom of a large pot. Drain grease. To beef add one can of stewed tomatos, one can of red kidney beans, half of a jar of ChiChi's medium salsa, and a dash of chile powder. Cook over a medium flame until heated. Serve with bread.

Thai Saute - Terry A., Kansas
Cut up boneless chicken breast into strips. Cut while partially frozen to make this a quick job. Saute in a pan until chicken is no longer pink in the center. Add 1/2 cup water and throw in a bag of your favorite vegetable medley. When all is cooked, add enough of a jar of Thai Peanut Sauce to cover. Boil up two packages of the instant Ramen noodles(discard season packet) and toss with chicken mixture. Serve this to your families and get ready for the delighted squeals of "Not this again!"
Editor's Note - Let's leave the jokes to the professionals people. Just kidding, I love the humor and the recipe is actually really tasty. I used frozen snow peas.

Homemade Peanut Butter Cups - Leslie C., Texas
In a large bowl stir together one cup of peanut butter, two sticks of margarine, one box of confectioners sugar and a tablespoon of vanilla. Press into a 13x9 pan and place in the refrigeratior. Microwave a bag of chocolate chips and two tablespoons of margarine for thirty seconds at a time until frosting consistancy. Take out slightly chilled peanut butter and spread chocolate on top. Put back in fridge to chill.
Editor's Note - This is a little complicated for a MommyOwl recipe - with the frosting and all. But, it taste so good I put it in. Just this once!
